Pesto Balsamic Chicken Recipe

Ok first things first — I need recipes that are stupid easy. To put it in perspective for you, the first year I was married, I made my husband spaghetti with no meat… yep, you read that right. Noodles and sauce only. Needless to say, I will never live that down. BUT I’ve come a long way, and this recipe is stupid easy, only four ingredients, and so good!
4 Ingredients:
Boneless skinless chicken
Pesto ( I get mine from Aldi )
Mozzarella cheese ( also from Aldi )
Balsamic glaze ( from our local grocery store)
MOST IMPORTANT STEP: Patience...
You’ve got to let the chicken marinate in a ziplock bag covered in pesto overnight. Me, being the lower-than-average sous chef I am, used to think marinating was a hoax. It’s not a hoax, lol. Do this step and it will taste amazing every single time!
Next, I throw mine on our Traeger grill. I cook it at 350°F for about 12 minutes, then flip to the other side and do another 10–12 minutes.
Once it’s off the grill, melt some mozzarella for the top, drizzle with balsamic glaze, and THAT’S IT.
How easy is that?? I loved switching it up this week with something so simple yet so delicious. If you try it, tag me on Instagram!! Mainly so I can show my husband how much of a cooking influence I’ve become — now that’s the real hoax! 😂
